Pumpkin Pie Smoothie

 

Fall is probably my favorite time of year. After a long, hot summer, the cooler weather such a welcome change. I live in Southern California, so we don’t get to experience fall like the rest of the country does but what I do get to experience is just as wonderful. A drop in temperature, leaves falling to the ground, cups of hot tea, warm sweaters and boots to keep my feet toasty. 

Pumpkins are another one of my fall favorites. Oh…how I love pumpkin. Pumpkin pie. Pumpkin bread. Pumpkin pancakes. Pumpkin custard. Pumpkin cookies. Pumpkin muffins. You name it: I love it.

Pumpkin itself is so good for you. It’s packed with vitamin A and has a good dose of vitamin C, potassium & fiber. 

The problem is, that much of the pumpkin yumminess that’s cooked up for us isn’t all that healthy. Usually, I can find a recipe that is healthier or take a traditional recipe and make healthy modifications. Those are both great options when I have time to bake. 

What if, I were to take the deliciousness of pumpkin pie and blend it with a protein shake? Oh my goodness…I’d have a complete meal that’s filling and tasty. Yes, please! 

TIPS

I like to use Nutrimeal Free protein powder because many protein powders don’t blend well and often have a grainy texture. This one blends smooth to a smooth consistency and has a light vanilla flavor.

I always add extra fiber to all my smoothies and like to use Fibergy because its tasteless and blends extremely well, even when I’m just using a blender bottle with a wire whisk.

Pumpkin Pie Smoothie

Total time: 5 minutes
Serves: 1

10-12 oz filtered water 

3 scoops Nutrimeal Free (or another vanilla protein powder) 

2 tsp Fibergy or psyllium husks (optional) 

1/2 cup puréed pumpkin (organic, if possible)

1/4 tsp vanilla extract

1/2 tsp pumpkin pie spice 

1/2 cup – 1 cup ice (optional)

Place all the ingredients in a blender and blend until smooth. Pour into a cup and enjoy!
