I love the fact that my entire family is moving closer and closer to a whole foods, plant based diet. My youngest son is the only hold out, although he’s figuring it out on his own more and more.

Have you ever ended up with too much of a good thing? 

I did. Somehow I ended up with a gazillion cans of organic pumpkin in my cupboard. 

Well, actually, I do know how it happened, and I just didn’t use them up. 

My dogs love pumpkin, so one year I bought a bunch of cans because they use seasonal at Trader Joes. Except now they carry them year around, and I always forget that I have it on hand.

So yes, my dogs love it but they rarely get to indulge. Sad…I know! :(  (more…)

Oil-Free Hummus

I don’t know about you, but I’ve never been a hummus fan. Well, that is until now. 

It’s funny because my nephew LOVES hummus. He’d marry it, if he could. :) 

It was my daughter that started eating hummus. Sure, I’d buy it every now and then, but I’d get tired of it quickly. Then my daughter decided to try it. She loved it! (more…)

Lazy summers seem to lead into yummy breakfasts for my kids, not made by me. 😉

My kids love pancakes (as most kids do) and, in the summer, there’s enough time in the morning to make a batch.

Two of my kids love to cook, and those two usually end up arguing over who’s going to make the batter (one prefers a mix, and the other prefers homemade). (more…)

Chia seed jam is super easy to make and is so yummy! 

Traditional jam is full of sugar and pectin, but this jam gets its thickness from the chia seeds.

Once a liquid has been added to chia seeds, they hold up to 12 times their weight in water and form a gel.

Not to mention that chia seeds are a nutrition powerhouse, despite their tiny size.  (more…)

Each year for their birthday, I let each of my kids choose their birthday cakes. I know this isn’t anything new or exciting – it’s usually it’s chocolate or vanilla or an ice cream cake. But when I asked my daughter and she wanted a carrot cake, I was so excited! 

The reason I was excited may have had to do with the fact that I’d been craving carrot cake for sometime now, especially since I had indulged in a not so health version at a friends baby shower recently. It was so good I couldn’t stop myself, but I sure felt the effects of a sugar higher almost immediately afterwards followed by a fight with my eyelids, trying to keep them open in the long car ride home. If you know me, you know that I love my smoothies!

They’re are an easy and delicious way to get ton of vegetables and fruits into your diet.

I started drinking them about 3 years ago, and I have one on most days.

Eat? Yes eat. You must chew your smoothies in order to get the digestive juices flowing (with the help of your saliva) which will in turn improve your digestion and absorption of nutrients.1

This is by far my most favorite smoothie. It’s so creamy and delicious that it tastes like dessert! I can’t believe that it’s actually good for me. (more…)

I’m so bummed! I’ve been under the weather lately, dealing with a virus that surfaces from time to time. It is usually dormant, but comes to life every once in awhile.

Ugh. I hate being sick. As you know, as a mom life goes on even when we’re sick!

Loaded Sweet Potatoes
I love sweet potatoes! I’ve been adding them more and more to my diet this year, choosing them more and more over the white ones. They’re so tasty and easy to cook. I love roasting them, but when I came across a recipe for sweet potatoes with some toppings, I had to stop and try it out. Just like you, I’m all about making recipes easy and yummy. The original recipe called for a 20 minute extra step that I completely omitted. Who’s got that kinda time when you and your family are hungry?!? (more…)
