Loaded Sweet Potatoes
I love sweet potatoes! I’ve been adding them more and more to my diet this year, choosing them more and more over the white ones. They’re so tasty and easy to cook. I love roasting them, but when I came across a recipe for sweet potatoes with some toppings, I had to stop and try it out. Just like you, I’m all about making recipes easy and yummy. The original recipe called for a 20 minute extra step that I completely omitted. Who’s got that kinda time when you and your family are hungry?!?

Sweet potatoes offer many health benefits. They’re extremely hight in beta-carotene, rich in phytonutrients, and have antioxidant properties. They are also an excellent source of vitamin A (in the form of beta-carotene), and they are a good source of vitamin C, manganese, copper, pantothenic acid, and vitamin B6 as well as potassium, dietary fiber, niacin, vitamin B1, vitamin B2, and phosphorus.1

Having trouble sleeping? Sweet potatoes can help with that, thanks to the fact that they’re a complex carbohydrate, which promotes sleep, and the potassium content, which acts as a muscle relaxer.2

Ready to try this delicious recipe that’s super easy to make? 

 

Loaded Sweet Potatoes

Serves 4
Prep time: 10 minutes
Cooking time: 55 minutes
Total time: about 1 hour

 

Ingredients

  • 4 medium sweet potatoes, washed
  • 1 pound ground beef, turkey or bison (use grass-fed/organic/free-range)
  • 1 medium yellow onion
  • salt & pepper to taste
  • 2 cloves garlic, pressed or minced
  • 1 medium avocado, cubed
  • green onions or chives, and/or cilantro, chopped
  • cayenne pepper (optional)

 

Directions

  1. Preheat oven to 425˚ F.
  2. Wash and dry the sweet potatoes. You can either wrap them in foil before placing them in the oven or place them directly on the oven rack. Just be sure to lay a piece of foil on bottom of the oven to catch any drips, even if you’ve wrapped them in foil. I’ve learned my lesson on this one. 😉
  3.  Place them in the oven and bake for 45 minutes or until tender. Remove from the oven when they are done.
  4. Once the potatoes are done (or about 10 minutes before), brown the meat in a skillet. Add the onion, salt and pepper. Sauté until the onion is translucent. 
  5. Add the garlic and cayenne, if using, and cook for another couple of minutes. 
  6. Cut the baked sweet potatoes lengthwise and top with avocado, green onions or chives and cilantro.
  7. Serve & enjoy!
